These Mushroom Wellingtons are so exquisite and complex in flavor. They are such a showcase item, beautiful enough for a holiday meal and yet perfect for a comforting weekday meal as well. The creamy mushroom pâté filling sits atop a perfectly roasted portobello mushroom, then encased in a crispy puff pastry wrap, drizzled with a mushroom and red wine jus… just perfect!
