Salads are one of my favorite things to make, the textures, the flavors, the brightness!

This salad has it all, the earthy tender roasted beets, the peppery fresh baby arugula, the crunchy sweet spicy pistachio brittle, and the tangy orange vinaigrette. Divine on its own or a great accompaniment to the Portobello Wellingtons.
