Spanikopita Pies with Taziki - 6 Servings

Spanikopita is one of my favorite dishes to both make and eat.

This one is light and crispy with a creamy filling of fresh sautéed spinach, scallions, dill, vegan feta and served with a creamy almond milk Greek yogurt Taziki. Pair this with the Roasted Fall Salad, invite some friends over, and have the perfect summer dinner al fresco.
